Secondly, does your ring fit properly? Whether you have previously been to get your finger sized with your partner or not, it is so important to have a ring that fits like a glove (literally). You don’t want it too tight or too loose. If you are unsure, take it to the jewellers who will best advise you on your size (they often do half-sizes too). This brings us onto number 3 – insurance.
So often we hear about missing engagement rings which were not insured. This is not only a strain on the purse strings, but also devastating as ‘the original’ holds so much sentimental value. You are able to get possession insurance through your household insurer, but again, your jeweller can advise you on this too as you will need a valuation to certify all the details about your ring in order to submit to your insurer.
Number 4 (our favourite) - CELEBRATE. This is such an exciting time for both you and your family and friends and let us tell you, they just cannot wait to see the ring either! Engagement parties have become extremely popular over the past 5 years and can almost give a wedding a run for its money! After you have celebrated and you have time to sit back with your partner, we recommend that you spend this time wisely and (cue number 5) discuss your wedding day. This doesn’t have to be all the little intricate details but just enough so that you can gauge a budget, style and time of year you want to marry.
Number 6 - Setting a budget is probably the most important here. Is there wiggle room? Do you want to keep it under £10,000? Who is paying for what? Without a budget costs can easily spiral out of control. We have a number of incredible wedding packages in Essex which are a great way to keep costs down and still have the wedding of your dreams.
Another must-do and one to add to the list is our number 7 – attend exhibitions and open days. These are a fantastic way to help open your mind if you either have no idea what you want, or if you know exactly what you want and are looking for suppliers. We hold around 6 open days and evenings a year which give our perspective bride and grooms the opportunity to view Orsett Hall, one of the top a wedding venue in Essex. Last but not least is number 8 – get booking! By no means should you rush, but the sooner you start booking things such as your venue, florist, photographer, caterers, cake maker etc. the sooner you can relax and enjoy engaged life. Remember that suppliers get booked up sometimes years in advance so it’s best to start gathering your quotes early. By booking and paying deposits, you will also know how much money is outstanding giving you a better idea on how much saving up is required.

We are very excited to announce the launch of our brand-new menu in The Garden Brasserie this October! The menu, which has been designed and developed by our talented chefs, is a fantastic reflection of everything we believe in here at Orsett Hall Hotel. Fresh ingredients which have been locally sourced, combined and constructed in such a way that highlights delicious tastes and flavours appealing to all palettes.
Each dish has its own unique style which introduces an exciting twist to our much-loved menu. Our chefs have been creative, yet still are able to serve classic dishes which are always popular with our diners such as the Fisherman’s Pie and our mouth-watering Slow Cooked Pork Belly (See below - mmm!).
Not only are we serving ‘The Classics’, our vegan and vegetarian diners are in for a special treat, too! Our Sweet & Sour Tofu dish is simply delicious and is packed full of Asian-inspired flavours, you will think you’re in the Far East! The Cauliflower Steak is also a new addition – succulent, juicy and a true taste adventure. Even the most devout meat-eaters will enjoy these gems!

We are all guilty of doing a ‘quick dash’ to big supermarkets to buy food, however, now more than ever we are in danger of losing our family butchers, grocery shops and bakeries that our parents and grandparents have been using for decades! Investing in local producers is so much more than buying British; the produce is packed full of flavour and also helps the environment and keeps our local economy alive.
Here in The Garden Brasserie, we swear by using local suppliers for our ingredients. Not only is this exciting, but it is invigorating, sociable and mentally very satisfying! It allows us to have a play around with ingredients which enables us to get creative in the kitchen and feature some wonderful, seasonal dishes.
If you are a customer at The Garden Brassiere you might have had our 28-day aged steaks or maybe our mouth-watering Suffolk chicken. We, at Orsett Hall Hotel, are extremely proud to use local suppliers which you can taste in all of our dishes on the menu.
Our meats are sourced from Traymoor Meats, based in Dunmow, who source quality produce from approved abattoirs and are proud members of the Aberdeen Angus Cattle Society along with the renowned Scotch Beef Club. With full traceability being such a high for the chefs here, it’s great that we can trace our meat from the farm to the plates we proudly serve.
Our other meat supplier is Direct Meats who are based in Colchester. We are also able to undertake full traceability on the produce. Our star meat from them is their delicious Dingley Dell Pork! It is such a brilliant product which is packed full of incredible flavours and is certainly a cut above (pardon the pun) any other pork that we have tried.
Chefs Choice is our local fruit and vegetable supplier. They go above and beyond for us, and we would never switch suppliers. The fruit and vegetables we obtain from Chefs Choice are truly delightful, extra juicy and flavoursome. Based in Basildon, they never fail to source even the smallest of items we might that no one else can get for us. They definitely live up to their company motto; ‘If we can, we will.’
Chefs Choice also help us with seasonality in products and inform us if there might be a shortage of a certain product before the supermarkets even find out! This enables us to tailor our dishes which is what helps to make our menus so unique and exciting. Locally, they are members of the Essex Chambers of Commerce which helps smaller businesses succeed, Chefs Choice is one of our longest serving suppliers having used them for around 9 years.
Not forgetting our ever-popular Afternoon Tea, we use a high-class tea company called Newby. They are based in London and their initial aim was to “reintroduce quality tea and revive the world’s love for it”; that has certainly happened here at Orsett Hall Hotel! They purchase the highest quality tea leaves which are in their prime for picking. This ensures the purest taste of tea, which is fantastic for us as we like tea the good old-fashioned way by serving loose-leaf tea! Not only is it a sustainable company, it is owned by the N Sethia Foundation, a registered charity, with projects and programmes for all across the globe, ensuring absolute integrity and standards.

Almost everything you will write down on your list will be available in a whole host of colours! Once you have your colour scheme sorted, which often falls in line with bridesmaids’ dresses, the finer details and decisions will become easier. Couples also choose colours depending on the season; we see more rich colours such as deep purples and reds in the winter, whereas in the summer we see more soft peaches and blush pinks. The above image is our pavilion; a spacious room which is a blank canvas which our couples love! It can be decorated to fit in with any colour scheme.
Seasonality also helps when choosing the smaller details too – favours or place names for example. Favours often have a personal meaning to couples as they symbolise a ‘thank you’ to the guests, a gift which guests can take with them. This could be a traditional pouch of sugared almonds, personalised lollipops or even handmade soaps! The possibilities are endless and are completely unique to you.

We always include an added extra to the plate which our guests always have a soft spot for; a popular treat in particular is our homemade sausage rolls – truly scrumptious!

"This is a tough question as it is so hard to only choose 5 flavours. For me fresh ingredients are paramount and this comes across in our dishes, I also like to shop locally wherever possible. Certain flavours work well with meat and others with fish. I think Plant based dishes will grow in popularity this year, my team also enjoy coming up with new ideas for Vegans and Vegetarians."
Which chef's do you consider a role model and why?
"The Chef’s I work alongside everyday are great role models, we have a great range of ages, characters and personalities. There are always new idea’s being thrown around the kitchen which helps us be innovative and ahead of the game."
If you could cook for one last time only, what would you cook for the guests of Orsett Hall?
"I would have to cook one of our Chef’s tasting menu’s. 7 courses of pure delight, starting from amuse bouche, then on to starters, fish course, then main course would range from beef fillet to lamb cannon. Our pre-dessert is a show stopper, a take on egg & soldiers, with vanilla panacotta and passionfruit gel remembering the egg and the French toasted brioche fingers mirroring the soldiers. Finishing with a rich chocolate indulgence."
What do you absolutely have to have in your kitchen?
"I really enjoy having a thermomix in the kitchen. I feel it's such a good machine in terms of an all-round machine. It blends, chops and cooks all in the same process, it can even make sorbets and knead bread for us. It's almost like having another chef that plugs in."
Why should people dine at The Garden Brasserie in Orsett Hall?
"We have such broad cuisine at the Garden Brasserie. You can enjoy traditional fish & chips whilst your dining guests tuck into a beef fillet rossini or a traditional cheese board instead of our signature carrot cake dish. The plant pot is made out of chocolate and the carrots look like they are growing out of the soil which is chocolate crumbs. Presentation is a huge part of what we do."
